    Lemon-Sage Marinated Cornish Hens
    4 Cornish hens
    3//4 cup lemon juice
    6 tbs olive oil
    1/4 cup vodka (optional)
    1 tbs sage

    2 tsp honey
    dash hot peppr sauce
    Split hens, removing backbone. Place in large resealable plastic bag. In small bowl, combine lemon juice, olive oil, vodka, sage, honey and hot pepper sauce. Mix together until well blended. Pour mixture into bag, coating hens completely. Seal bag. Marinate in refrigerator 24 hours. Heat gril. Remove hens from marinade. Discard marinade. Place hens, skin side down, on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 30 minutes, turning once, or until internal temperature reaches 180. 8 servings = about 360 calories.
