    Default Spinach and Cheese Calzones

    Ingredients:
    • 1 diced onion
    • 1 clove garlic, minced
    • 3 cups roughly chopped fresh spinach
    • 1 cup ricotta cheese
    • 2 oz feta cheese
    • 1/2 tsp each nutmeg and salt
    • 1/4 tsp cayenne pepper
    • 1 egg yolk
    • 1 recipe pizza dough (although I used Pillsbury)
    • 1 tbsp yellow corn meal


    Directions:

    1. Preheat oven to 375 degrees.
    2. Heat some oil in a frying pan. Saute onion for 5 minutes till soft. Add garlic and saute another minute. Add spinach and cook until wilted, about two minutes.
    3. Combine in a mixing bowl: feta, ricotta, salt, pepper, nutmeg, and egg yolk. Add spinach mixture. Stir to combine.
    4. Roll out pizza dough into a 12" square. Divide into 4 equal pieces. Mound the filling equally on the squares, leaving 1/2 of the diagonal empty and also leaving a 1/2" border. Fold over the dough, using a fork to pinch the edges shut.Use a knife to vent the tops.
    5. Sprinkle the corn meal on a large baking sheet. Place the prepared calzones on the sheet.
    6. Bake at 375 for 25 - 30 minutes, or till golden brown.
