    Default Pineapple Cobbler

    I made this yesterday and it was so good I thought I would share.

    Ingredients:
    1 c. all-purpose flour
    1 c. sugar
    pinch of salt
    1 Tbsp. baking powder
    3/4 c. milk
    1 tsp. vanilla
    1 stick unsalted butter, melted
    1 20oz. can pineapple tidbits, drained

    Directions:
    Preheat oven to 375 degrees. In a bowl, mix flour, sugar, salt, baking powder, milk and vanilla extract. Stir mixture until it forms a smooth batter. Gently stir in butter until combined.

    Spread batter evenly in a 9x13 inch baking dish. It will look like a thin layer. Scatter the pineapple evenly over batter.


    Bake 25 minutes or until pineapple has fallen to bottom of pan and top is puffed and golden brown and springs back slightly when touched in middle.

    Cool slightly and then serve warm with vanilla ice cream or whipped cream.


    NOTE: I used prepared dry milk instead for the milk and it was devine.
