    Heart Maltagliati with Baby Peas, Onion, and Bacon

    here's something from my menu
    Maltagliati with Baby Peas, Onion, and Bacon
    3 oz bacon
    3 tbs olive oil
    3 green onions, very finely chopped
    10-oz pkg frozen baby peas
    1 tbs parsley
    3/4 tsp mint
    1/2 cup dry white wine
    1 1/4 cup chicken broth
    salt, to taste
    pepper to taste
    1 lb fresh pasta, cut as desired (or 1 lb pkg of wide egg noodles)
    2 tbs butter at room temperature
    Parmesan, to serve
    Blance bacon in boiling water for 1 minute. Chop when cooled and set aside. Warm the oil in a large, deep skillet over medium-low heat. Increase the heat to medium and add the bacon. Saute until the meat begins to color, 3 minutes. Add the green onions and saute until wilted, about 3 minutes. Stire in the peas, parsley, and mint, and continue to saute for 3 minutes. add the wine and let evaporate for 3 minutes. stire in the broth and 1/2 tsp of salt, or to taste. Simmer gently, partially covered, until the peas are cooked, about 15 minutes. Check for salt and sprinkle with pepper, to taste. Cook the pasta, fresh or packaged. Drain the pasta and toss with the sauce and butter. Serve at once with Parmesan! 4 servings = about 660 calories.
