    Lightbulb Artichoke Garbanzo Pasta Salad

    Artichoke Garbanzo Pasta Salad
    12 oz can artichoke hearts, chopped
    1 can (15 oz) garbanzo beans, drained
    1-3 cups cooked pasta, any kind is good...even spaghetti
    2 cups fresh spinach, chopped
    1 large tomato, chopped
    1 red bell pepper, chopped
    1 tbs olive oil or vegetable oil
    1 tbs lemon juice
    1 tbs water
    1 tsp minced garlic

    3/4 tsp dried basil or oregano
    1/4 tsp pepper
    1/8 tsp salt (optional)
    1/4 cup feta cheese
    Mix first 6 ingredients in a large bowl. Blend next 7 ingredients in blender or food processor until smooth. Pour over salad and toss. Cover and chill for at least 2 hours. Top with feta cheese before serving. 6 servings = about 275 calories.
