    Heart Chicken and Broccoli

    This was a simple and yummy recipe. Warning: it's a bit salty as is, which we welcomed this evening, but you may want to use low sodium versions of the soy sauce and chicken broth if that bothers you.

    Ingredients:

    1 lb chicken (raw; I used chicken breast and sliced it up)
    1 bag frozen broccoli
    1 cup chicken broth
    2 Tbsp olive oil
    1 tsp minced garlic
    a small can sliced water chestnuts
    soy sauce to taste (I used a full 1/4 cup for the whole dish)


    Saute chicken in olive oil until browned (don't worry about cooking it all the way through). Add garlic, chicken broth. Simmer 15 minutes. Add broccoli and water chestnuts, as well as soy sauce. Simmer an additional 5 to 10 minutes and serve.

    This would be nice over some brown rice. We ate it as is, no starches added.
