Third Generation Banana Loaf
Third Generation Banana Loaf
1 cup mashed bananas
1/2 cup shortening
2 eggs
2 cups flour
1 cup sugar
1 tsp lemon juice
3 tsp baking powder
1/2 tsp salt
Cream sugar and shortening. Beat eggs and add to mixture. Add mashed banana and lemon juice. Mix. Sift remaining ingredients into mixture and mix well. Place in lightly greased bread pan. Bake at 325 degrees for 1 1/4 hours.

I've never put lemon juice in banana bread before, but I'll sure try it. Thanks for sharing this recipe.
