Turkey Taco Skillet
This is one of our favorite quick one dish meals. Hope you like it
1 lb. ground turkey
1 Tbs. taco seasoning
2 c. water
1 jar (16 oz) thick & chunky salsa
1 can (11 oz) Mexican-style corn
2 c. instant brown rice
1 c. shredded cheddar cheese or Mexican blend
2 c. shredded lettuce
1 large tomato, chopped
1/2 c. reduced-fat sour cream (regular works well too)
Cook turkey in a large nonstick skillet over high heat, stiring to break up meat until browned. Stir in seasoning mix, water, salsa and corn; bring to a boil. Stir in rice. Cover and remove from heat; let stand 12 to 15 minutes, until liquid is absorbed. Sprinkle with cheese, cover and let stand until cheese is melted, about 1-2 minutes. When serving top rice mixture with lettuce, tomato and sour cream. Serve with tortilla chips.
