    Sesame-Honey Drumsticks
    1 egg
    1 tbs milk
    1/4 cup sesame seeds
    1/4 cup unseasoned dry bread crumbs
    4 chicken drumsticks
    3 tbs honey
    1 tbs lemon juice
    dash to 1/4 tsp cayenne pepper
    Heat oven to 375 degrees. Spray small rimmed baking sheet with cooking spray. Whisk egg and milk in medium bowl. combine sasame seeds and bread crumbs in medium shallow bowl. Dip chicken in egg mixture. Roll in sesame seed mixture to coat. Place on baking sheet. Bake 25 to 30 minutes or until chicken is light golden brown and no longer pink in center, turning once. Meanwhile, combine honey, lemon juice and cayenne pepper in small bowl. Drizzle chicken with honey mixture. Serve immediately. 2 servings = about 470 calories.

    Broccoli and Rice Stir Fry
    2 cups uncooked brown rice
    1/2 tsp salt
    1 1/2 cups vegetable broth
    1 tbs light brown sugar
    2 tbs fresh lime juice
    2 tbs sweet chili sauce
    2 tbs creamy peanut butter
    1 tbs lite soy sauce
    1 tsp grated fresh ginger
    3/4 tsp cornstarch
    1 tbs peanut or vegetable oil
    1 tsp dark sesame oil
    2 cups fresh broccoli florets
    1 cup carrot sticks
    2 tbs chopped peanuts
    Garnish: lime wedges
    Prepare rice according to package directions, adding 1/2 tsp. salt. Meanwhile, combine vegetable broth and next 7 ingredients in a medium bowl, stirring well. Heat oils in a nonstick skillet or wok over high heat 1 minute. Add broccoli and carrot sticks. Stir-fry 2 minutes. Add liquid and bring to a boil. Cook, stirring constantly, 2 minutes or until thickened. Add hot cooked rice. Toss to mix well and mingle flavors. Sprinkle with chopped peanuts. Garnish, if desired, and serve. 6 servings = about 200 calories.
    you'll have more rice than chicken, so you take the leftover rice and toss in a can of chicken or ham or salmon and you have another meal. OR mix in a few eggs and some cheese, bake, and you have another meal
