Beef-Barbecue One-Pot Dinner
This is a one-pot dinner that my family enjoys. I usually serve it with beer rolls.
1 lb. lean ground beef
1 c. onions, chopped
1 c. carrots, thinly sliced
1 c. potatoes, diced
1 c. water
1 can (14 oz.) baked beans
1/2 c. barbecue sauce
1 c. shredded cheddar cheese
Brown meat in large nonstick skillet on medium-high heat; drain. Add vegetables and cook 5 minutes, stirring occasionally. Stir in water. Reduce heat to medium-low; cover and simmer 10 minutes or until vegetables are tender. Add beans and barbecue sauce and stir to combine. Cook 5 minutes or until heated through. Sprinkle with cheese.
Makes 4 servings, 1 1/4c. each.
