    Default Your Rice ~ American Black Bean and Rice Salad

    Your Rice
    Make your rice as you like it and reserve the leftovers for the next recipe.

    this is a wee bit different from the other salads I've posted, so I gave it a different name this is also a make-ahead meal -- make in the morning and eat at night OR throw it together right after the dinner with rice and have the next night!
    American Black Bean and Rice Salad
    1/2 tsp salt
    1 clove garlic, crushed
    1 bay leaf, crushed
    2 tsp chili powder
    2 tsp cumin seed
    2 tsp thyme
    2 cups white rice, cooked
    2 cans (15 oz) black beans
    1 small red bell pepper, diced
    1 jalapeno pepper, seeded and diced
    1 oz cilantro, chopped
    1 tsp yellow mustard
    1 tbs red wine vinegar

    2 tbs olive oil
    2 tsp chili powder
    2 tsp hot pepper sauce
    1 clove garlic, crushed
    1 tsp black pepper
    1 tsp salt
    Combine all ingredients in a casserole dish or large bowl. Chill and serve over mixed greens. 8 servings = about 205 calories.
