    Wink Baked, Boiled, or Roasted Potatoes ~ Asparagus with Potatoes and Wild Rice

    Baked, Boiled, or Roasted Potatoes
    Have leftovers? at least two? good! make a whole new meal!

    Asparagus with Potatoes and Wild Rice
    1-1/3 tbs olive oil
    3/4 oz butter
    2 potatoes, cooked and cut into 1/2 in. cubes
    2 slices bacon, chopped
    1 clove garlic, crushed
    3/4 cup cream
    1-1/4 oz sun-dried tomatoes, drained, chopped

    1-1/3 tbs thyme
    1-1/2 oz cooked wild rice, cooked
    1 lb fresh asparagus
    Heat oil and butter in a heavy nonstick pan over medium high heat. Add potatoes, bacon, and garlic. Cook, stirring, until potatoes are heated thoroughly. Drain on paper towel. Return potato mixture to pan. Stir in next 3 ingredients and rice. Lower heat and simmer, uncovered, about 3 minutes or until cream thickens slightly. Place asparagus in a steamer basket over boiling water. Cover pan and steam 10 minutes, or until tender. Serve with potato mixture. 4 servings = about 315 calories
