Chocolate Coca-Cola Cake
The Cake
2 cups all-purpose flour
2 cups sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 cup Coca-Cola Classic
1 cup (2 sticks) butter or margarine
1/2 cup buttermilk
2 eggs, well beaten
1 teaspoon vanilla extract
2 cups miniature marshmallows
Coca-Cola Frosting (recipe follows)
Preheat oven to 350 degrees. Grease and flour a 13-by-9-inch pan.
Combine flour, sugar, cocoa and baking soda in mixing bowl. Combine Coca-Cola and butter in saucepan and bring to boil. Pour over dry ingredients and stir to blend. Mix in buttermilk, eggs, vanilla and marshmallows. (Batter will be thin.) Pour into pan and bake 35 to 38 minutes. Let cool 15 minutes, then spread with warm frosting.
The Frosting
1/2 cup (1 stick) butter or margarine
6 tablespoons Coca-Cola Classic
3 tablespoons unsweetened cocoa powder
4 cups (1 pound) powdered sugar
1 cup chopped toasted pecans
Combine butter, cola and cocoa in saucepan and bring just to boil. Pour over powdered sugar and blend until smooth. Stir in pecans. Use while warm.
Variation. For a Dr. Pepper cake, allow a can of regular (not diet) Dr. Pepper to go flat. Substitute Dr. Pepper for Coca-Cola Classic in batter and frosting.
