    Smile Rice ~ Amaretto Rice Pudding

    Make your rice! Just don't season it too much with herbs and save a cup for dessert

    Amaretto Rice Pudding
    1/2 cup dried peaches, chopped
    1/4 cup Amaretto
    1 cup cooked rice
    3 cups evaporated skim milk
    2 tsp unsalted butter
    1/4 cup sugar
    2 eggs, beaten

    cinnamon
    nutmeg
    Soak the peaches in the Amaretto for 10 minutes. Set aside. Combine the rice, milk, butter, and sugar in a saucepan. Bring to a boil, lower the heat, and cook until the mixture is creamy, about 10-15 minutes. Stir constantly so the milk does not curdle. Add the peaches and cook 1 more minute. Remove from the heat and add eggs. Return to the heat and cook for about 5 minutes until the mixture is creamy. To serve, sprinkle individual dishes of rice pudding with cinnamon and nutmeg.
    note: this is VERY close to the recipe that I posted last week. so choose the one that agrees with your pantry! LOL!
