    Title: BROCCOLI RICE CASSEROLE
    Categories: Casseroles, Vegetables, Rice
    Servings: 6

    1 sm Onion, chopped (Use onion powder)
    1 10 oz pkg. frozen broccoli,
    -thawed
    1 8 oz jar process cheese spread
    1 cn (10 3/4 oz.) condensed cream
    Of Chicken soup, undiluted
    1/3 c milk
    3 c Cooked rice

    “This hearty casserole is my favorite dish to make for
    a potluck. With the green of the broccoli and the rich
    cheese sauce, it's pretty to serve, and it makes a
    tasty side dish for almost any kind of meat.” -


    In a large skillet over medium heat, steam broccoli until soft. Stir in cheese, soup and milk until smooth and add rice. Place rice in a
    greased baking dish. Bake, uncovered, at 325 degrees for
    25-30 minutes or until hot and bubbly.


    I've made this for over 30 years and serve with fresh bread or rolls. I also use grated cheese if that's all I have to use and works fine.

    PASTA FAGIOL (PASTA AND BEAN SOUP)969354

    1 lb. navy beans
    1 lb. tubettini or tiny shells pasta
    3 cloves garlic, chopped
    2 tsp. celery leaves
    3 tsp. parsley
    1/2 tsp. ginger
    2 (8 oz.) cans tomato sauce
    2/3 c. oil
    3-4 qts. water

    Wash and sort beans. Start cooking in hot water with oil, ginger, garlic, celery leaves and tomato sauce. Cook beans until soft. Add water as necessary. Cook for 2 1/2 hours. Add parsley. Cook for another 1/2 hour. Add cooked pasta to each bowl just before serving to desired thickness.

    6 tbsp. margarine (3/4 stick)
    3 lg. carrots, sliced
    2 med. celery stalks, sliced
    2 med. onions, diced
    1 sm. garlic clove, minced
    1 med. head green cabbage (chopped)
    2 (16 oz.) cans chopped tomatoes
    8 c. water
    1/3 c. long grained rice or pasta
    2 tsp. salt
    2 tsp. Worcestershire sauce
    1/4 tsp. oregano leaves
    1/4 tsp. black pepper

    4 med. potatoes, peeled and chopped
    4 beef flavored bouillon cubes
    2 (15-20 oz.) cans Red beans
    (drained)

    In 10 quart Dutch oven over medium heat in hot margarine, cook carrots, celery, onions, garlic and cabbage until vegetables are browned, stirring frequently. Add tomatoes with their liquid and the next 8 ingredients; over high heat, heat to boiling, stirring occasionally. Reduce heat to low, cover and simmer 30 minutes or until vegetables are cooked. Add beans. Serve with grated Parmesan cheese sprinkled on hot soup.

    PASTA AND BEAN SOUP 967220
    2 cloves diced garlic
    1/4 c. salad oil
    1 can Progresso cannellini white beans
    2 cans water
    3/4 c. cooked macaroni or other pasta
    4 tbsp. spaghetti sauce
    Pinch basil flakes
    Pinch parsley
    Pinch oregano
    Salt and pepper to taste

    Brown garlic in oil. Add beans with liquid, water, pasta, spaghetti sauce, basil, parsley, and oregano. Bring to boil, then simmer about 10 minutes. Better if made ahead and reheated.

    This versatile and hearty vegetarian soup saw many Maltese families through difficult times, including WW II, when Malta was under constant threat of seige from air attack and people spent a majority of their time in shelters. While growing up in America, we also called this our meatless "Friday soup." 3 tbsp. olive oil
    2 heaping tbsp. tomato paste
    3 lg. onions, chopped
    Salt and pepper

    In a large soup pot, fry the onions in the oil until they are softened. Stir in the tomato paste. Add salt and pepper to taste. Fill the pot to the halfway mark with water, bring to a boil and add: 1 chopped and cleaned cauliflower
    1 c. cooked beans (or peas)
    2 chopped carrots
    Any other vegetables you want

    After 3/4 hour of simmering, add: 1 c. dry pasta (elbows, shells,
    broken-up spaghetti, etc.)
    1 chopped lg. potato

    Add more water if needed to cover the vegetables and cook for 20 minutes more. Into this simmering soup gently add: 2 eggs, slightly beaten in a cup
    1 c. ricotta or feta cheese

    For a special treat we often cracked open and dropped in a whole egg for each child or added hardened chunks of Parmesan cheese to soften in the soup. I think you'll agree this soup, served with a good bread, can be a meal in itself.

    WHOLE-GRAIN FIVE-SEED BRAID
    1 1/2 cups (12 ounces) hot water
    3/4 cup Harvest Grains Blend (or your favorite mix of grains and seeds such as oats, millet, sunflower, poppy or sesame seeds)
    1 1/2 cups (6 1/4 ounces) whole-wheat flour
    2 cups King Arthur unbleached bread flour
    2 tablespoons vegetable oil or olive oil
    1 1/2 teaspoons salt
    2 teaspoons instant yeast
    Topping:
    1 egg white plus 1 tablespoon water for egg wash
    About 1/2 cup favorite mix of grains and seeds


    Combine the water and grain blend, and cool to lukewarm. Add remaining dough ingredients and mix together. Knead about 8 minutes by hand, in a mixer or bread machine, until dough is soft and smooth, adding additional water or flour as necessary. Place dough in a large bowl, cover with plastic wrap and a clean towel, and allow dough to rise until almost doubled, about 1 1/2 hours.
    Divide dough and roll into three 14-inch logs. Braid the logs on a lightly greased or parchment-lined baking sheet. Use parchment if you're going to bake directly on an oven stone; you can transfer the loaf, parchment and all, to the stone. Brush loaf with egg wash and sprinkle with seeds. Cover with plastic wrap and a clean towel and let rise about 45 minutes, until puffy.
    Preheat oven (and baking stone, if you're using one) to 400 degrees. Bake the bread about 28-35 minutes, until it's golden brown. Interior temperature should be 195 degrees or more. Remove the bread from the oven and cool completely on a rack. — King Arthur Flour


    (I used a mix of steel cut oats, barley, flax seeds, sesame seeds and sunflower seeds)
    I used olive oil instead of Vegetable oil. I made buns out of this- 12 in a 9"X 13" pan.

    I got this one from con agra Foods and it's one of our favorite meals! Make sure you do the rice up ahead of time and refrigerate or freeze it. i found if i use it fresh , it becomes a gooey mess!

    Vegetable Fried Brown Rice
    Easy-to-prepare vegetable fried rice featuring brown rice and Egg Beaters
    Ingredients
    PAM Original No-Stick Cooking Spray
    3/4 cup Egg Beaters Original
    1 bag (16 oz each) frozen stir-fry vegetables, thawed
    1 teaspoon minced garlic
    2 cups cooked brown rice, chilled
    2 tablespoons La Choy Lite Soy Sauce
    2 teaspoons toasted sesame oil
    1/4 teaspoon ground ginger
    La Choy Chow Mein Noodles, optional
    Directions
    Spray large nonstick skillet with cooking spray. Heat over medium heat. Add Egg Beaters; cook without stirring until edges and bottom begin to set. Lift uncooked portion and gently turn to scramble. Continue cooking until set. Remove from skillet. Cover and keep warm.
    Spray skillet again with cooking spray. Add vegetables and garlic; cook and stir 6 minutes, or until vegetables are crisp-tender. Stir in rice, soy sauce, sesame oil and ginger; cook until heated through. Stir in cooked Egg Beaters. Garnish with chow mein noodles, if desired. Serve immediately.

    7 Can Taco Soup

    I got this from the online Deseret News and it’s one of our favorite soups!

    2 cans diced Tomatoes with green pepper & onion
    1 can Rotel Tomatoes
    1 can corn
    1 can red beans
    1 can pinto beans
    1 can black beans
    1 teaspoon onion powder
    1 pkg. powdered Ranch dressing
    1 pkg. powdered taco mix

    Mix all together in dutch oven. DO NOT DRAIN! Cook until hot. Stir occasionally to make sure It is not sticking. Serve with tortilla chips. No meat- No fat.

    COLD SOUP

    As soon as I can get everything we need to make this from our garden we keep a gallon jar of it in our fridge for the rest of the season! We love it! (DO NOT COOK!)

    1 can V-8 Juice
    1 cucumber
    2 tomatoes
    6 green onions
    1 T. Parsley
    1 tsp. Creole Seasoning
    slat
    pepper
    1 cup salad oil
    1 T. vinegar
    1 T. Sugar
    1/2 tsp. garlic powder
    bell pepper
    carrots

    DO NOT COOK!!!!! Dice all vegetables into very small bite size pieces and mix with all the other ingredients in a very large bowl. Refrigerate. The longer this sets the better it taste. It fits into a gallon jar. Keeps for at least 2 weeks. We really really love this soup!

    This recipe was something I grew up on though I have adapted it for my own tastes (my mom adds a sm can of tomato sauce to it). Excuse me for not having exact measurements like normal recipes. I serve it with crusty bread...it's so yummy!

    Spinach & Rice

    2 bags of spinach (I buy it when it's on sale)
    2 onions (use less or more depending on your taste)
    3 bunches of scallions (again use more or less)
    1/2-1 cup of long grain white rice (I use Uncle Ben's but it doesn't matter)
    1 1/2cups of water
    Olive oil
    Salt, Pepper, Oregano

    Wash & clean spinach, put spinach in big pot. Cut onions and scallions add to spinach. Swirl olive oil around pan 2x. Season with salt, pepper, & oregano. Cover put and put heat on high. It should only take 5 minutes or so for spinach mixture to wilt down. Stir in rice (I like to use 1 cup) and then 1 1/2 cups of water. Put cover back on pot and simmer until water is absorbed and rice is done. You may want to stir mixture occasionally as it is cooking. Serve with lemon juice (I use fresh lemons)- my SO uses hot sauce on it.


    Greek Bean Soup- This one is really easy.

    1 bag of small white beans (that is what they are called)
    5 carrots cut in slices
    5 celery stalks chopped
    2 onions chopped
    2 tbsp of olive oil
    salt & pepper
    1 small can of tomato sauce
    *you can add more of the veggies- I have also used baby carrots if they are on sale

    Rinse beans (make sure there are no rocks in the bag). Add beans to pot cover with water (about 3 cups). Add remaining ingredients. Salt and Pepper to taste. Cover pot and bring to boil. Once it comes to a boil, simmer until beans and veggies are soft. I cook mine for about 6 hours. During cooking time make sure you check the soup and add more water as needed.

    2 cups leftover mashed potatoes
    2 Tbsp. flour
    1 egg
    margarine

    Mix first 3 ingredients. Make into patties and fry in margarine until golden brown on each side. Serve warm with butter or margarine. Delicious served with applesauce.

    Fried Mushrooms, Zucchini, Onion Rings and Squash


    mushrooms
    zucchini
    onions
    squash
    flour
    1 egg, beaten
    1/2 cup milk
    cracker crumbs
    vegetable oil for frying
    salt and pepper

    Wash all the vegetables. Slice the zucchini, onions and squash into thin slices. Put some flour in a bowl. Put egg and milk in another bowl and mix. Place crackers crumbs into a bowl. Put the vegetable oil in a deep saucepan or fry pan and heat to 375° or until a few crumbs of cracker fry quickly. Dip vegetables into flour, then egg mixture, then cracker crumbs and fry until golden. Drain on paper towels. Salt and pepper to taste and serve hot with ranch dressing.

    My Mom makes these and adds a little onion to it. So yummy!!!
