    Arrow Rice ~ Almond Peach Rice Pudding

    Rice
    Prepare rice as you normally do (that is, without herbs or extra spices) and reserve 1 cup for the next recipe.

    Almond Peach Rice Pudding
    1/2 cup dried peaches, chopped
    1/4 cup Amaretto
    1 cup reserved rice
    2 cups milk
    1 cup half & half
    2 tsp unsalted butter
    1/4 cup sugar

    2 eggs, beaten
    ground cinnamon
    nutmeg
    Combine peaches and Amaretto in a bowl and soak 10 minutes. Set aside. Combine next 5 ingredients in a saucepan over medium high heat. Bring to a boil. Immediately reduce heat to low, and simmer 15-20 minutes, stirring constantly, or mixture is creamy. Add peaches with their soaking liquid and cook 1 minute. Remove from heat and allow to cool slightly. Whisk in eggs. Return to the heat and cook about 5 minutes until mixture is creamy. Serve sprinkled with cinnamon and nutmeg. 6 servings = about 255 calories.

    go to freecycle or craig's list or goodwill for a dehydrator and start stockpiling your own dried fruits. this way when stuff is on sale...munch a few and dehydrate a few
