This is something that we like to do especially in the summer time
when you can get all the veggies fresh! It still has the familer
tomatoe taste but is oh so light and comes together in a very short

-1 large white or yellow onion diced
-1 small purple onion (if desired)diced
-about 6 cloves of garlic diced or sliced depending on your taste
-1 carrot cut into thin rounds or diced to taste
-about 1 pound tomatoes. Whatever your favorites are. I like to
use the grape or the plum varietys best. Cut into bite sized pieces.
-Olive oil for cooking. about 1-2 tablespoons
-dash or oregeno, pepper and italian seasoning if desired.

Sautee the onions untill almost transparent. Add the carrot and
sautee untill almost tender. Add the garlic, seasonings and tomatoes

and cook untill tomatoes have blistered. Serve over any type of
pasta or noodles.
