    Default Lemon-Garlic Beef

    Lemon-Garlic Beef
4 lb beef roast -- any cut will do
    1 cloves garlic, chopped
    4 tbs olive oil
    2 tbs parsley
    3 tbs lemon juice

    1/8 tsp pepper
Place roast in crockpot. Mix remaining ingredients in a bowl and pour over roast. Cook on low 6-8 hours.
Make a gravy with the juices and serve over mashed or baked potatoes, your favorite veggie on the side...oh yum! The lemon juice gives it a nice, subtle flavor different from your standard roast in a crockpot. Everyone will want seconds! LOL!

This recipe is going in my recipe box. DH went through the freezer yesterday (hunting for something) & found 2 roasts. He had told me we diidn't have one in the freezer. Yeah, right!

I think ya'll will like it! I was tired of making 'regular' roast in the crockpot many years ago and decided to play DD said it was a keeper! LOL! so it's a nice change of pace from traditional roasts.

I'm with all of you, it sounds great. Will need to try it when I pick up another roast.(on sale)
    Margaret,
I used to have same problem of not being sure what was in my freezer. Have an upright outside in DH's shop.
Took an hour (wearing gloves) emptied it and made a list of everything as I put it back and straightened it out.
I now mark stuff off my inventory list as it's taken out and add it to the list as I restock.
It really helps with the meal planning to know exactly what you have and also helps with restocking things as you find them on sale.
I don't inventory my pantry or my fridge freezer, can pretty much tell at a glance what I have. Just had a major problem with unknown items in the big freezer.
