    Roasted Summer Squash or Zucchini
    4 squash
    1/4 cup olive oil
    Rinse squash in cold water. Scrub with vegetable brush. cut in half lengthwise. Remove stem ends. Spray or brush squash with olive oil. Heat grill. Place squash on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Grill 2 minutes. Turn to cook bottom 2 minutes. Season with salt and pepper. Remove and serve 2 slices per person. 8 servings = about 75 calories.

    you can do this with acorn squash, too!

    This is how we eat ours too. No better way than grilling it, for the taste anyway. (Plus is can be made into a pie too, very good.)
