    Default Caribbean Pork with Sweet Potatoes

    CARIBBEAN PORK WITH SWEET POTATOES
    1 CAN (13.5 OR 14 OZ) LITE COCONUT MILK (WHO AM I KIDDING?!)
    3 TBSP FLOUR
    1 TBSP CARIBBEAN JERK SEASONINGS (IN THE SEASONS AISLE WITH THE 'SPECIALTY' SEASONINGS...ANY BRAND)
    3 CLOVES GARLIC, THINLY SLICED
    2-LB BONELESS PORK BUTT, CUT IN 1 1/2 CUBES (THIS IS MY FAVORITE CUT OF PORK AND I USE IT FOR MOST EVERYTHING)
    2 LARGE (ABOUT 2 LB) SWEET POTATOES, PEELED, CUT IN 1 1/2-IN CUBES
    2 CUPS FROZEN PETITE GREEN PEAS
    1/2 CUP COARSELY CHOPPED FRESH CILANTRO
    1. PUT COCONUT MILK, FLOUR, JERK SEASONING AND GARLIC IN A 3-QT OR LARGER SLOW-COOKER. WHISK UNTIL WELL BLENDED. ADD PORK AND SWEET POTATOES; STIR UNTIL WELL COATED.
    2. COVER AND COOK ON LOW 7 TO 8 HOURS, OR UNTIL MEAT IS TENDER.
    3. SPOON OFF FAT. STIR IN FROZEN PEAS AND CILANTRO. COVER AND LET STAND 5 MINUTES FOR PEAS TO COOK. SERVES 4 = 757 CALORIES

    If you don't have Jerk Seasoning on hand, you can make your own:
    2 tablespoons dried minced onion
    2 1/2 teaspoons dried thyme
    2 teaspoons ground allspice
    2 teaspoons ground black pepper
    1/2 teaspoon ground cinnamon
    1/2 teaspoon cayenne pepper
    1/2 teaspoon salt
    2 tablespoons vegetable oil

    Yield: 1/4 cup

    If you want to get really authentic, here's another recipe:
    3 tablespoons fresh thyme
    2 tablespoons fresh gingerroot, about 1 . 1/2 inches
    2 tablespoons ground allspice
    1 tablespoon black peppercorns
    2 tablespoons soy sauce
    2 tablespoons oil
    1 tablespoon vinegar
    2 tablespoons pineapple juice
    1 teaspoon ground nutmeg
    1 teaspoon ground cinnamon
    2 teaspoons salt
    2 bunches green onions
    2 fresh scotch bonnet peppers or habanero peppers
    6-8 garlic cloves, depending on size
    2 fresh limes, juice of
