    Greek barley salad with feta

    Penne with squash, tomatoes, and mozzarella (makes one meal and two leftover sides for me)

    BLT pasta salad

    Crunchy Vietnamese slaw with pork (from the freezer) and leftover penne

    Farmers' market stir-fry over rice

    Grilled pork chops with mango relish and leftover rice

    Pork tenderloin with grilled creamy corn and oregano and the last of the penne

    I know the BLT pasta salad should explain itself....but what all comes in that??? Excellent idea!!

    I make this as a meal and then have two lunches for the week.
    BLT Pasta Salad
    6 oz farfalle
    1 lb bacon
    2 cups cherry tomtoes, halved
    2 cups packed baby spinach
    6 tbs mayonnaise
    2 tbs finely minced drained oil-packed sun-dried tomatoes (optional -- not everyone stocks their pantry with this, but everyone should try to make their own from the garden)
    2 garlic cloves, minced
    1/2 tsp Worcestershire sauce
    1 cup croutons
    Cook farfalle according to package directions. Drain. Rinse under cold water. Place in large bowl. Meanwhile, cook bacon in large skillet over medium-high heat 6 to 10 minutes or until crisp, turning once. Coarsley chop. Add bacon, tomatoes and spinach to farfalle. Combine all remaining ingredients except croutons in small bowl, stir into pasta mixture until well coated. Stir in croutons just before serving. Makes 4 servings = about 580 calories.

    BLT Pasta Salad, this sounds really good. I've never had this salad before, I'll have to try it.

    This salad sounds yummy. Has quite a few calories but I have to say they sound like they are worth it. lol I am certainly going to be trying this recipe.
