    Default Low-Fat Biscuits

    LOW-FAT BISCUITS
    2 CUPS UNBLEACHED WHITE FLOUR
    1 TBS SUGAR
    1 TBS BAKING POWDER
    1/2 TO 1 TSP SALT (OPTIONAL)
    4 TBS VEGETABLE SHORTENING
    1 PACKAGE ACTIVE DRY YEAST
    1/4 CUP LUKEWARM WATER 3/4 CUP LUKEWARM SKIM MILK
    MELTED BUTTER (OPTIONAL)
    1. IN A LARGE BOWL, SIFT TOGETHER FLOUR, SUGAR AND BAKING POWDER (AND SALT IF DESIRED). CUT IN SHORTENING UNTIL MIXTURE RESEMBLES COARSE MEAL. SET ASIDE.
    2. IN A SMALL BOWL, SPRINKLE YEAST OVER WARM WATER. STIR UNTIL YEAST DISSOLVES. ADD MILK AND MIX WELL.
    3. ADD YEAST MIXTURE TO DRY INGREDIENTS AND STIR WITH A FORK TO MAKE A STICKY DOUGH.
    4. TURN DOUGH ONTO A HEAVILY FLOURED BREAD BOARD AND KNEAD GENTLY WITH FLOURED HANDS FOR ABOUT 30 SEC OR UNTIL SMOOTH. COVER WITH A TOWEL AND LET RISE ON BOARD FOR 20 MIN.
    5. GENTLY ROLL OUT DOUGH 1/2" THICK. CUT WITH FLOURED BISCUIT CUTTER, AND ARRANGE BISCUITS 2" APART ON AN UNGREASED BAKING SHEET. PREHEAT OVEN TO 400?.
    6. LET BISCUITS RISE FOR 15 MIN, THEN PLACE IN OVEN AND BAKE FOR 12 TO 15 MIN. IF DESIRED BRUSH TOPS OF HOT BISCUITS WITH MELTED BUTTER. COOL ON A RACK. MAKES 12 BISCUITS = 116 CALORIES
