2009 Weekly Dinner Menu - 1.12-1.19
Monday - Beef Chop Suey, White Rice, Iced Tea
Tuesday - *Chicken fajita nachos, Iced Tea
Wednesday - BBQ pork chops, Au gratin potatoes, Iced Tea
Thursday - Baked Chicken, Seasoned potato chunks, Iced Tea
Friday - Pizza stuffed hamburgers, Tater tots, Iced Tea
Saturday - Eating out with my mom in Houston as we are going to a gun show.
Sunday - Pizza, Iced Tea
*Chicken fajita nachos - Tortilla chips topped with refried beans, chunks of chicken fajita meat/peppers/onions, and cheese. Serve with salsa and sour cream.
Lunch This week will consist of: Ramen noodles, PB&J, Bologna sandwiches, and Turkey sandwiches.

great menu plan! do you serve your chicken fajita nachos individually or do you make a big platter to serve from?

I make up about 5-8 for each person and serve them on a big platter. I like melting the cheese under the broiler. They are very filling so no more than 10 per person. I also put out a small bowl of sour cream/salsa/taco sauce/etc. for people that like this type of stuff. I ended up making Spanish rice as a side and it was great.

This is a great menu! When we do nachos for the kids, I usually shred a bed of lettuce and make mine on that instead of chips. It's a slightly healthier version, but tastes like heaven.
