    Heart Plan-Ahead Apple Pie Fillings

    here's two recipes to choose from.
    Freezer Apple Pie Filling #1
    1 Cup Sugar
    1/2 Teaspoon Salt
    1 Teaspoon Cinnamon
    1/2 Teaspoon Nutmeg, ground
    1 1/2 Tablespoons Flour
    2 Tablespoon Butter or margarine
    4 Cups Apples, cooking peeled and sliced
    1/4 Cup Lemon Juice
    Instructions
    Mix sugar, salt, cinnamon, nutmeg, and flour in a small bowl. With a fork, blend butter into sugar mixture until it is crumbly. Place the
    lemon juice in a large bowl. As you peel and slice the apples, place them in the lemon juice and toss to coat well. When all apples have been coated with the lemon juice, pour apple slices into a colander and drain well. In a large bowl, mix drained apple slices and sugar mixture. Put apple mixture in a labeled freezer bag or container. Remove excess air, seal and freeze.

    Freezer Apple Pie Filling #2
    12 lbs apples

    3 cups sugar
    2/3 cup quick tapioca
    lemon juice
    4 teaspoons cinnamon
    1 teaspoon nutmeg
    Wash peel core and chop apples into lemon juice and water turning to coat as you go. Drain the apples. In very large pan combine the apples with the above ingredients, stir to mix and coat all the apples. set aside for 20-30 minutes, while stirring occasionally to mix again. Then, cook over medium heat until the filling starts to thicken. Set aside to cool. when cool package into 1 quart jars or freezer baggies and freeze.( be sure to leave headspace for expansion) yields approximately 6-7 quarts.

    This sounds great especially the cooked one. The other one is perfect when we have a few apples on the way to spoilage as it happens sometimes in my home. Thanks for the secret weapon.
