Sweet Potato Casserole

Filling
3 cups cooked mashed sweet potatoes
1 cup sugar or splenda
2 eggs or equivalent of egg substitute
1-2 tsp cinnamon,suit to your taste
1-2 tsp vanilla, suit to your taste
1/2 cup melted margarine or butter
1/4 tsp salt

Mix ingredients well until mixture is "fluffy" and light looking.
Pour into casserole dish.

Topping
1 cup brown sugar or splenda blend
1/3 cup self rising flour

1 cup shredded coconut
1 cup chopped pecans
1/3 cup melted butter or margarine

Mix all but melted butter/margarine together until well mixed. Add melted butter/margarine and mix well. Works well to use your hands. Spread on top of filling mixture.

Place in preheated 350 degree oven for 30-40 minutes.
