    Default 12/28 - 1/3 Menu Plan

    Sunday:

    Breakfast: Overnight Breakfast Casserole with fruit on the side
    Lunch: Patty Melt Sandwiches with side salad
    Dinner: crock pot chicken and biscuits with green beans
    Dessert and Snacks planned: popcorn, fruit, and smoothies

    Monday:

    Breakfast: Banana Bread and Smoothies
    Lunch: Corn Dog Casserole with side salad
    Dinner: Salisbury Steak, mashed potatoes and green beans
    Snacks: Crock Pot Rice Pudding

    Tuesday:

    Breakfast: Leftovers from the past few days
    Lunch: Vegetable Fried Rice
    Dinner: Pinto Beans with Fried onions and corn bread
    Snacks: Leftover snacks

    Wednesday:

    Breakfast: Overnight Oatmeal
    Lunch: Egg Salad Sandwiches
    Dinner: Spanish Rice, Refried Beans, and Tortillas
    Snacks: Lemon Bars

    Thursday:

    Breakfast: Country Buffet (have a coupon for 2 free kids meals!)
    Lunch: Black Eye Peas with ham, greens, and cornbread
    Dinner: Leftovers
    Snacks: Chocolate pudding


    Friday:

    Breakfast: Overnight french toast with fruit
    Lunch: Pizza
    Dinner: Roast chicken with potatoes, salad, and dinner rolls
    Snacks: Popcorn and fruit

    Saturday:

    Breakfast: Overnight oatmeal
    Lunch: Chicken and rice soup
    Dinner: Lentils and Rice with salad
    Snacks: Butter cake made with fruit juice and dusted with powdered sugar

    can you tell me how to make corn dog casserole please ??? It sounds really good !!!

    Corndog Casserole
    Serves 6

    Grease a square baking dish.

    Combine in a mixing bowl:
    2 beaten eggs
    1 1/4 cups milk
    1/4 cup oil or melted butter
    1 1/2 cups cornmeal
    3/4 cup flour
    1 tsp salt
    2 Tbsp sugar
    1 Tbsp baking powder

    Stir well.

    Add in:

    1 cup (thawed) frozen corn kernels
    4 - 6 hot dogs, cut in half lenghtwise, then in fourths width-wise
    1 cup shredded cheddar cheese
    a squirt of mustard
    1/4 cup diced onion

    Bake at 400 for about 30 minutes.

    This is really a "head recipe" that I throw together so the measurments are estimates. Basically, take your favorite cornbread recipe, add in hot dogs, corn, cheese, onion, and mustard, and bake as you would regular corn bread.
    It's always a big hit around here.

    That sounds like an easy recipe for my kids to make when I have to work at night...thanks!!!
