    Default Shrimp Creole

    12oz bag cooked frozen shrimp
    (thaw in cold water, drain and remove tails)

    1 med onion chopped
    1 stalk celery chopped
    1/2 green bell pepper chopped
    2 cloves garlic minced

    cook the above in 2 T butter for about 5 min

    2 14oz cans chopped tomatoes (do not drain)
    1 Tbl dried parsley
    1/2 tsp paprika
    1/4 tsp ground red pepper
    1/2 tsp salt
    1 bay leaf

    add these to the cooked chopped veggies bring to a boil, reduce heat and simmer for 15 min.

    mix 2 tsp cornstarch in 1/2 cup cold water and add it and the shrimp to the pot. cook about 2 more minutes until hot and thickened.

    remove bay leaf and serve over rice - about 4 servings
