I love to make this around this time of the year. It must be a holiday thing or something. It just seems to go with the theme of things. I also like useing applesauce, it's cheaper and easier for me. As it cooks it well turn a dark rich brown color, that's when you know it's done, and then place in jars, (that have been in a hot water bath), and then give them as a gift.

Can you make it without the cloves? I cannot stand the smell or taste of cloves. I forget if you said or not so I may just be asking something you already said (oops) how long does it last after its made?

How long is it good for after you make it? Do you need to put it in the fridge right away?

mrskorba...you do need to refrigerate right away unless you decide to can or freeze the apple butter. Refrigerating it should be good for 8-10 days (if it lasts that long! LOL!) Canning as you know lasts longer;-D Freezing it works, but when you defrost, it needs to be stirred well as it tends to separate. Defrosted apple butter still tastes great as long as you stir it well after defrosting. And there's no need to stir it after that...once is all it needs! ...giggle...
