    Default Chicken Spaghetti Casserole

This can be made into 2 casseroles (8x8) dishes. Freeze one, eat one. My family eats it all, so I use a 9x13 dish.

2 c. chopped cooked chicken breast
2 c. uncooked spaghetti noodles, broken into 2 in. pieces
1 c. chopped red bell pepper
    1 c. chopped onion
1 c. chicken broth (can use fat-free kind)
    1/2 tsp. salt
    1/4 tsp. pepper
2 cans (10.75 oz) condensed mushroom soup, undiluted (can use fat-free kind)
    1 c. shredded cheddar cheese

Preheat oven to 350. Combine first 4 ingredients in a large bowl. Combine broth, salt, pepper, and soup in a medium bowl, stirring with a whisk. Add soup mixture to chicken mixture, toss. If you are doing two casseroles, divide it into two 8x8 dish coated with cooking spray and sprinkle 1/2 c. cheese on each. Put one in freezer. Otherwise, Pour mixture into 9x13 dish coated with cooking spray, sprinkle with cheese.

Cover with foil and bake for 35 minutes. Remove foil and bake another 10 minutes.

    Enjoy
