    Post Grilled Squash Bruschetta

    Grilled Squash Bruschetta
    Slice small sweet onion and small yellow squash and/or zucchini lengthwise into 1/4-inch slices. Brush with olive oil. Grill, covered, over medium-high heat or coals 4 to 6 minutes or until lightly charred and tender but not mushy, turning occasionally. Slice small loaf of Italian or French bread into 1/2-inch thick pieces. Brush with olive oil. Grill, covered, 2 minutes or until golden brown, turning once. Spread 1 side with soft goat cheese. Top with onion and squash. Drizzle with balsamic vinegar. Lightly sprinkle with herbs, such as thyme or marjoram.
