    Default Tomato-Artichoke Pasta Sauce

    TOMATO-ARTICHOKE PASTA SAUCE
    2 TBS LIGHT OIL
    6 CLOVES GARLIC, MINCED
    11 16-OZ CANS SODIUM-FREE TOMATOES, DRAINED AND CHOPPED
    4 TBS CAPERS, RINSED AND CHOPPED
    3 1/2 CUPS PITTED BLACK OLIVES, RINSED AND SLICED
    5 CUPS CANNED ARTICHOKE HEARTS, RINSED AND QUARTERED
    3 TBS SODIUM-FREE TOMATO PASTE
    1 TBS SUGAR
    1 TBS PLUS 1 TSP OREGANO
    1 TBS PLUS 1 TSP BASIL

    PINCH CAYENNE PEPPER
    6 TBS PARMESAN CHEESE
    1. HEAT OIL IN A 12-QUART SAUCEPAN OVER MEDIUM HEAT. COOK GARLIC ABOUT 30 SEC TO RELEASE FLAVOR.
    2. ADD TOMATOES, CAPERS, OLIVES, ARTICHOKE HEARTS, TOMATO PASTE, SUGAR AND SPICES. BRING TO A BOIL, REDUCE HEAT AND SIMMER FOR 20 MIN.
    3. STIR IN PARMESAN CHEESE AND SERVE WARM OVER HOT COOKED PASTA OR USE AS A BASE FOR LASAGNA. MAKES 14 SERVINGS = about 195 CALORIES. STORE EXTRA SAUCE IN THE FREEZER FOR UP TO 2 MONTHS.
