    Default Tex-Mex Cornbread

    2 eggs, beaten
    1 (8oz) carton sour cream
    1 (16oz) can cream style corn
    1/2 cup oil
    1 cup (4oz) shredded Cheddar cheese
    3 Tbs chopped onion
    1 (4oz) can chopped green chiles
    3 Tbs chopped red pepper
    1 1/2 cups cornmeal
    2 1/2 tsp baking powder
    1 tsp salt

    Mix eggs, sour cream, corn, oil, cheese, onion, chiles, & red pepper. Mix cornmeal with baking powder & salt & add to sour cream mixture. Pour into greased 13x9x2 pan & bake at 350 degrees for 45 minutes.

    Serves 8-12
