    Default Carrot Nut Bread

    1 cup grated carrots
    1 cup sugar
    1/2 cup vegetable oil
    1 1/2 cups flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    2 eggs
    1 cup chopped pecans


    Mix together carrots, sugar, oil, flour, baking powder, baking soda, salt & cinnamon. Beat in eggs on at a time & stir in pecans. Pour into greased & floured 9x5x3 loaf pan & bake 55-60 minutes at 350 degrees.

    Makes 1 loaf

    We make this recipe on we add a small can of crushed pineapple (not drained). It is so good & reeally moist with the pineapple.

    What a wonderful recipe.. Sounds really good. Margaret K. I like the idea of adding the pineapples too, a moist version. You Ladies have me thinking of going to the kitchen and warming it up along with warming me up too...ummmm

    The temp will be dropping here for the weekend with the rain moving in. I can't wait to make this bread. I have a weakness....it's food!! But I do love homemade breads! Nothing quiet like homebread with a cup of coffee, hot tea, or hot chocolate. Mmmm, the thought of the smell and taste makes me want to stay home today and not go to work. LOL Here's another recipe that we will be using for Thanksgiving! Thanks a million!! Have a blessed day all!!
