Discard casings from 1/2 lb Italian sausages & cook until barely pink; finely shop. Add 1 cup finely chopped onion & 1/2 cup finely chopped bell pepperto pan & cook until softened. Stir in sausage, 2 Tbs Italian breadcrumbs & 1/4 cup chopped parsley; season with salt & pepper. Fill 16 white stuffer mushrooms. Bake in a 375 degree oven for 15 minutes.
