Wash trout filets and let drain.mix parmesan cheese into the fish Beardens fish fry mixture. Dredge filets in mixture.Pour olive oil in skillet or on a flat grill and heat to about 350 degrees.Place coated filets in skillet or on grill.Cook for about 2-3 minutes then turn. the thin filets won't take very long,so watch closely,the times are approximate.I usually keep a mixture of herbs on hand for fish made from basil,thyme,rosemary,marjoram and sometimes dill.You will have to mix these to your personal tastes.Go easy on the rosemary!When the filets are doneplace them on a plate covered with paper towels or let them drain on a rack for a few moments.Dust the top of the filets with the herb mixture.Squeeze a little lemon juice over the top and serve.The parmesan in the breading gives this dish a unique edge over the tyoical fried fish dinner.try it with red snapper filets.You may have to cook longer as the filets are usually thicker.
