    Default Pork Roast with Apricot Sauce

    1 (4-5 lb) pork roast
    Mix together (for marinade):
    2 tsp oregano
    2 Tbs dry mustard
    2 tsp thyme
    1/2 cup sherry cooking wine
    1/2 cup soy sauce
    2 cloves garlic, minced
    1 tsp ground ginger

    Pour marinade over roast & refrigerate at least 3-4 hrs (overnight is better). Remove roast & place in foil lined dish. Discard marinade.

    Mix together;
    1 Tbs soy sauce
    1 (10oz) jar of apricot preserves
    2 Tbs sherry cooking wine

    Pour apricot mixrute over roast. Bake at 350 for 2 1/2 hrs.
