2 cups cooked regular rice
2 cups shredded cheddar cheese
3 cups grated carrots
2 eggs, beaten
2/3 cups milk
1 Tbs minced onion
1 tsp salt
1/4 tsp pepper

Combine all, stirring well. Spoon into greased 1 1/2 qt casserole. Bake at 350 for 1 hr or until set.
