    Default Brunch Cheesecake

    Brunch cheesecake
    2 cups 1/2" bread cubes
    1 9-oz can crushed pineapple, packed in juice
    1 tbs cornstarch
    15 oz nonfat ricotta cheese
    1 tbs powdered egg substitute or 1 egg white*
    2 tbs wheat germ
    2 tbs dry bread crumbs
    1 tbs brown sugar
    1. Layer bread cubes in a lightly oiled 1/2-quart casserole dish. Set aside. Drain pineapple, reserving juice.
    2. In a small saucepan, combine pineapple juice with cornstarch. Heat, stirring, until thickened and clear. Set aside.

    3. Preheat oven to 350. Mix together ricotta cheese, egg substitute or egg white and crushed pineapple until well blended.
    4. Add cornstarch mixture; stir gently and spoon into casserole dish on top of bread cubes.
    5. Combine wheat germ, bread crumbs and brown sugar. Sprinkle on cheesecake. Bake for 35 to 40 min. Serve warm. Makes 8 servings = 134 calories.
    *campers -- you can make this at your campsite using your camping dutch oven...the top just won't be browned.

    mos this is healthy: you have your calcium, wheat germ, fruit. Okay so I can justify a snickers bar as healthy

    okay, you may not believe this...but I don't eat much candy...really...what's in a snickers bar? is that the one with peanuts on the top? if it is, well...it full of protein! LOL!

    Snickers has the chewy caramel and the peanuts covered in chocolate. If you get the dark bar it is healthy chocolate that we should have on a daily basis (shhh we wont discuss the size ) there is milk and the peanuts are great protein to help keep your energy level up (okay for maybe an hour or so because of the sugar crash ).

    I have this problem that I like chocolate and it seems to love me and stays with me forever
