Del Monte Ratatouille

1 eggplant (approx. 1 lb) 1 cup chooped green pepper 1 clove garlic, minced 2 Tbs oil 1 can (14 1/2oz each) Del Monte No Salt Added Cut Green Beans 1 can (8oz) Del Monte Tomato Sauce 1/2 tsp basil, crushed 1/8 to 1/4 tsp pepper 1.) Peel eggplant, if desired & cut into 3/4 inch cubes.

    Default Del Monte Ratatouille

    1 eggplant (approx. 1 lb)
    1 cup chooped green pepper
    1 clove garlic, minced
    2 Tbs oil
    1 can (14 1/2oz each) Del Monte No Salt Added Cut Green Beans
    1 can (8oz) Del Monte Tomato Sauce
    1/2 tsp basil, crushed
    1/8 to 1/4 tsp pepper


    1.) Peel eggplant, if desired & cut into 3/4 inch cubes.
    2.) Saute eggplant, onion, green pepper & garlic in oil 3-4 minutes. Add beans, tomato sauce, & seasonings. Bring to a boil; reduce heat & simmer, covered 15 minutes. Serve hot or cold.
