    Default Cheese & Chili Cornbread

    (Jiffy Recipe)

    (Serves 8-10)

    1 pkg Jiffy Corn Muffin Mix
    3 eggs
    1 can (8oz) whole kernal corn, drained
    1 can (4oz) chopped
    green chiles
    3/4 cup melted margarine
    1 tsp baking powder
    1 tsp salt
    1 cup sour cream
    1/4 lb Monterey Jack cheese (coarsely grated)

    Preheat oven to 350 degrees, lightly grease a 9x9 inch square pan.
    Lightly beat eggs with a whisk. Add whole kernal corn & chopped green chiles beating well. Stir remaining ingredients into egg mixture & mix until well blended. Pour batter into prepared pan & bake for approximately 45 minutes or until golden brown. Cut into squares & serve hot with butter, if desired.
