    Default Southern Green Beans

    1 1/4 lb green beans, trimmed & chopped into 1 inch pieces
    2 slices bacon, chopped
    1 small onion, minced
    2 Tbs red wine vinegar
    2 tsp sugar

    1.) Cook beans in 1 inch simmering water, covered for 6 minutes. Drain & set aside.
    2.) Return skillet to burner on Mediu heat. Add bacon & brown. When fat begins to render, add onion & cook. Add beans & turn to coat. When beans are hot & bacon is crisp, add vinegar & season beans with sugar.

    3.) Allow vinegar to evaporate & sugar to combine with drippings, 1-2 minutes. Then serve.
