(Serves 6)

1 Tbs olive oil
1 cup chopped onion
1 green bell pepper, chopped
2 cloves minced garlic
1 tsp salt
4 Tbs tomato paste
1 (15.25oz) can kidney beans, drained (reserve liquid)
1 cup uncooked white rice

1.) Heat oil over medium heat. Saute onion, pepper & garlic until onion is clear. Then add salt & tomato paste. Reduce heat to low & cook 2 minutes. Stir in beans & rice.
2.) Pour liquid from beans into measuring cup & add water to make 2 1/2 cups of liquid. Pour liquid into beans. Cover & cook on low for 45-50 minutes or until liquid is absorbed & rice is cooked.
