    Default Caribbean Yellow Rice

    2 Tbs olive oil
    1 pkt Sazon with Coriander & Annatto
    1 pkt powdered chicken bouillon
    1 cup extra long grain rice
    2 cups hot water
    1/4 cup green bell pepper, diced
    1/2 cup tomato, diced
    1/2 cup onions, diced

    1.) Heat oil on Medium heat in a saucepan with a cover. Stir in onion & pepper & cook until onion is translucent. Stir in tomato, bouillon & sazon & cook 1 minute. Stir in rice & cook. Add water & stir to combine. Bring to a boil, cover & lower heat. Simmer 25 minutes. Fluff & let sit covered 5 minutes before serving.
    (Best served with salad, beef stew or stew meat.)

    Sazon is a spice. The Sazon with Coriander & Annatto is a Goya product. You can find it usually on the aisle that sells Mexican food products. It comes in a thin box (usually orange, I think) and in the box there are individual packets. If you love South or Central American of Mexican foods, you won't be able to live without this stuff! You can add it to almost anything. I add it to lentils or black beans, chicken dishes, etc. The smell is soooooo wonderful! My husband LOVES it when he comes home to that smell!

    I found the Sazon spice and made this last night. My whole family loved it. Very good! I can't wait to make it again.

    Oh, I am so glad you liked it! To me, the Sazon Spice is a miracle worker! It goes with almost everything! Beans, Rice, Chicken, Beef, etc. I'll post another recipe called "Bekka's Southwest Chicken" that maybe you will like.
