    16oz frozen pearl onions
    2 Tbs vegetable oil
    3 Tbs sugar
    1 1/2 cups beef stock
    4 Tbs red wine vinegar
    salt & pepper

    1.) Rinse onions in strainer to separate. Blot on paper towels.
    2.) In large heavy skillet heat oil over high heat. When hot, add onion & sugar & continue cooking 5 minutes, shaking often until onions are lightly colored. Add beef stock, adjust heat to medium-high, & continue cooking until liquid is almost completely evaporated, about 20-25 minutes. Stir in vinegar, cook 30 seconds, season with salt & pepper, & serve.
