Spaghetti with Checca Sauce
(This is a Giada De Laurentis recipe)
8 oz spaghettini or angel hair
4 scallions, coarsely chopped
3 cloves garlic, crushed
1 (12oz container) cherry tomatoes, halved
1 (1oz) piece Parmesan, coarsely chpped
8-10 fresh basil leaves
salt & pepper to taste
3 Tbs olive oil
4 oz fresh mozzarella, cut into 1/2 inch cubes
1.) Cook pasta about 8 minutes.
2.) Combine next 7 ingredients in food processor. Pulse just until tomatoes are coarsely chopped (do not puree).
3.) Drain pasta, reserve some of the water. Toss pasta with tomato mixture & mozzarella in large bowl. Add some reserved pasta water (about 1/4 cup) if sauce looks dry. Serve immediately.
