Pasta Napolitana- General Recipes

(Serves 4-6) 2 Tbs olive oil 1 onion, finely chopped 1 carrot, finely chopped 1 celery stick, finely chopped 1 lb very ripe tomatoes, chopped 2 Tbs chooped fresh parsley 2 tsp sugar 1 lb pasta

bring, carrot, celery, cook, cover, cup, drain, fresh, heat, low, minutes, olive, onion, pan, pasta, reduce, sauce, stick, tomatoes, water, chopped, finely, sugar, stirring, occasionally, parsley, season, serving, dente, toss, return, tomato, chooped, ripe, napolitana, boil, serves, simmer

    Default Pasta Napolitana

    (Serves 4-6)

    2 Tbs olive oil
    1 onion, finely chopped
    1 carrot, finely chopped
    1 celery stick, finely chopped
    1 lb very ripe tomatoes, chopped
    2 Tbs chooped fresh parsley
    2 tsp sugar
    1 lb pasta


    1.) Heat oil in pan. Add onion, carrot & celery; cover & cook 10 minutes over low heat, stirring occasionally.
    2.) Add tomato, parsley, sugar & 1/2 cup water. Bring to boil, reduce heat to low, cover & simmer 45 minutes, stirring occasionally. Season. If necessary, add 3/4 cup more water.
    3.) About 15 minutes before serving, cook pasta until al dente. Drain & return to pan. Toss with sauce.
