    Default Fresh Tomato & Garlic Penne


    (This is a Betty Crocker Recipe)
    (Serves 2)

    2 1/2 cups penne pasta (8oz)
    2 tsp olive oil
    2 garlic cloves, finely chopped
    1 lb (6 medium) roma (plum) tomatoes, coarsely chopped
    1 Tbs chopped fresh basil
    1/4 tsp salt
    1/8 tsp pepper


    1.) Cook & drain pasta.
    2.) Heat oil in 10 inch skillet over Med-High heat. Cook garlic in oil 30 seconds, stirring frequently. Stir in tomatoes. Cook 5-8 minutes, stirring frequently, until tomatoes are soft & sauce is slightly thickened. Stir in basil, salt & pepper. Cook 1 minute.
    3.) Serve over pasta.
