    Heart Yellow Squash Pie

    1 cup evaporated milk
    2 eggs
    1/2 cup honey or 3/4 cup sugar
    1 tsp. cinnamon
    2 cup cooked yellow squash
    1 unbaked pie shell


    Cube and cook yellow squash in small amount of water until tender, drain and cool. In blender, blend milk, eggs, cinnamon and honey OR sugar. Add cooked squash (cooled). Blend together 2 or 3 minutes. Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then 350 degrees for 35 minutes OR until set. Cool, then refrigerate until COLD.

    Wow never heard of trying squash in a pie. Sounds great, will have to try this one out.

    I had never heard of it either, until my mother had said something about it. So I went in search for the recipe, and made it this past weekend. I believe it taste better than a pumpkin pie. It's worth making again.
