    Default Bean & Cheese Burritos

    6 flour tortillas (7 or 8 inch)
    1 cup chopped onion (1 large)
    1 Tbs cooking oil
    1 (16oz) can refried beans
    1 cup shredded cheese (4oz)
    1/3 cup salsa


    1.) Stack tortillas & wrap tightly in foil. Heat in 350 degree oven for 10 minutes to soften.
    2.) Meanwhile, in skillet, cook onion in oil until hot, add beans. Cook until heated through. Spoon 1/4 cup of filling onto each tortilla just below center. Divide cheese among tortillas. Fold. Place on baking sheet. Bake @ 350 degrees for about 10 minutes or until heated through. Serve with salsa.

    I make something like this all of the time at home. I will put the salsa over top of the burritos and sprinkle with additional cheese before I place it in the oven. We like the extra cheese and sauce on the outside to spice it up a little.
