    Default Chocolate Raspberry Muffins

    15oz can sarpberries in syrup
    2 cups self-rising flour
    1/2 cup sugar
    1/2 cup Chocolate bits or chips
    1 lightly beaten egg
    2 oz. melted butter

    3/4 cup buttermilk

    Preheat oven to 375 degrees, prepare pans. Pour undrained raspberries into pan, bring to a boil without stirring for about 12 minutes, or until mixture is thick & a jam-like consistency. Cool. Combine the sifted flour, sugar & chocolate in a bowl. Mix egg, butter & buttermilk. Stir dry mix into wet mix until just combined. Gently fold in the raspberry mixture. Spoon into pans & bake for about 15 minutes or until cooked. Makes 12 muffins.

    Default Dr. Pepper Ham

    I am absolutely addicted to Dr. Pepper, so when I found this recipe on the internet I just couldn't resist!

    1 6/8 lb fully cooked ham (either shank or butt portion)
    1 can of Dr. Pepper

    Wrap ham in heavy duty foil, leaving top open to pour in Dr. Pepper. Place in a large enough pot to hold the ham. Pour in Dr. Pepper & close foil tightly around the ham. (You don't want the Dr. Pepper to leak out of the foil if possible.) Cook in preheated 250 degree oven for 6 to 8 hrs. (Put it in the oven in early morning & forget about it til dinner.) This is great with scallopped potatoes , salad & rolls.
